Hate zucchini? Really?

We were visiting some friends the other day when they started talking about zucchini.

The one fellows mother had a ton of zucchini from her garden that she couldn’t GIVE away! My zucchini is just starting to grow.

There were 5-6 people there and they were all like, “Zucchini, yuk! I hate it!”

Where have these people been? There are so many good things you can make with zucchini!

Benefits of zucchini:

Zucchini (or “courgette”) is:

  • Low in Saturated Fat, Sodium, and Cholesterol
  • High in Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese, Thiamin, Niacin and Pantothenic Acid

The nutritional value of zucchini makes it ideal for:

  • Maintaining optimum health
  • Weight loss

Don’t include too much zucchini in your diet if you’re interested in:

  • Weight gain

So won’t you give zucchini a second try?

    We LOVE zucchini! I think people just don’t like it because it “sounds” gross, like brussel sprouts.

    Love zuc’s. Just love ‘em! (Even had one from our garden w/ dinner tonight! :-> )
