Auntie C’s Christmas Butter Cookie’s (cut-outs)

1 c. (2 sticks) butter, softened
1 c. sugar
1 egg
1 TB. milk
1 tsp. vanilla
2 3/4 c flour
1 tsp baking powder
1/4 tsp salt

Cream butter, gradually adding sugar. Beat until light and fluffy.

Beat in egg, milk and vanilla.

Combine dry ingredients: gradually add to creamed mixture.

Cool dough for ease in handling

Roll out dough and have fun cutting out with cookie cutters.

Beef ‘n Rice Encilladas

1 pkg. (6.8 oz) Spanish Rice and vermicelli mix

1 lb. Ground Beef

2 Cans (10 0z each) enchilada sauce, divided

10 Flour tortillas (8 inches), warmed

4 cups (16 oz) shredded cheese, divided

Prepare rice mix according to box directions.

Meanwhile, in a large skillet, cook beef over medium heat umtil done. Drain.

Stir in Spanish rice and 1- 1/4 cups of enchilada sauce.

Spoon about 2/3 cup beef mixture down the center of each tortilla.  Top each with 1/3 cup shredded cheese.  roll up.

Place in ungreased 13″ x 9″ baking dish.  Top with remaining enchilada sauce and cheese.

Bake, uncovered at 350 for 8-10 minutes or until cheese is melted.

Makes 10 servings

Chicken Salad

Left over chicken-  finely diced

Celery- about 1/4 cup finely diced

Mayonnaise- enough to make salad the consistency you like

Salt, pepper, thyme or sage to taste

Mix it all up and enjoy!

Delish!

P.S.  I have never really measured my ingredients…I just make it “by eye” and taste.

Pumpkin Roll

1st of Ingredients

3 eggs
1 cp. sugar
2/3 cp. pumpkin
1cp flour
1 tsp baking soda
1/2 tsp cinnamon

Mix ingredients and set aside. Line a 10 x 15 cookie sheet with waxed paper. Spread batter on top of waxed paper.

Bake at 375 for 15 minutes.

Turn cooked cake out onto a towel sprinkled with powdered sugar. Remove wax paper and roll cake up into towel. Cool in refrigerator.

2nd set of ingredients

2 Tablespoons of soft butter
3/4 tsp vanilla
1 8 oz package of cream cheese
1 Cup of powdered sugar

Mix together to make a filling. Unroll cake from towel. Spread filling onto cake. Roll it back up. Put in refrigerator for at least an hour.

Before serving, sprinkle a little powdered sugar on the outside. Cut into slices and serve. Yum!

7 Layer Cookies

1 stick margarine

1 c. crushed graham crackers

1/2  cup flour

1/4  cup brown sugar

1 1/3  cup coconut

1 cup chocolate chips

1 cup walnuts

1 cup butterscotch chips

1 can of condensed milk

Preheat oven to 350. melt margarine in a 13 x 9 x 2 pan. Mix in graham cracker crumbs, flour and sugar.

Layer rest of items (except condensed milk) in pan.

Drizzle the milk over the top.

Bake for 25-30 minutes. When cooled, cut into squares.

These are very rich & delicious- better cut them small!

Zucchini

Zucchini Bread
Makes 2 loaves

Preheat oven to 350. Grease and flour two bread pans.

2 cup shredded zucchini
2 cup sugar
1 cup oil
3 eggs

Mix ingredients. Add to that:

3 cup flour
3 tsp. cinnamon
3 tsp vanilla
1/2 tsp baking soda
1 tsp salt.

Mix together, pour into pans and bake at 350 degrees for 1 hour.

Zucchini and Sausage Soup

Amounts of each ingredient is up to you- I have no “actual recipe” but it’s always delish!

Zucchini, diced
onion
green and /or red pepper
garlic
bulk dinner sausage (or sausage removed from casings)
some cooked hamburg
1 can of corn (or corn straight off the cob- yum!)
1 can of diced tomato’s
water

Mix it all together, add your favorite seasonings (I use a little salt, pepper, red hot pepper (dash), maybe a smidgeon of oregano.

    The 7 Layer Cookie is an interesting idea, never considered something so elaborate. I will have to substitute the coconut, as that’s an ingredient I can’t abide.

    Tried the Zucchini bread. WOW – it was awesome! I added a bit more cinnamon than your recipe states, but I’m a HUGE fan of cinnamon!
